Muscles sore from shredding? I know what you need - a warming bite to eat and an adult beverage is the ticket. In this post I'm going to share with you my top three apre - ski spots. And for the crowd who likes to apre at home - my wife's Beer & Lime Red Enchiladas.
Tahoe Mountain Club members only, Alpine Club is the best spot to sink in for a bite and watch the game. From the granite semicircle bar you'll be rejuvinated with an adult beverage and an order of Sweet Thai Chicken Wings or Queso Fondue. Alpine Club is a ritual for our family because they also have a kids media room where the little ones can chill out.

for the home chef: Beer and Lime Red Enchiladas
Apre at home with a comforting helping of my wife's Beer & Lime Braised Red Enchiladas. My wife loves making this dish for company because not only does it feed an army but guests always leave singing praise for the recipe. I'll let her take it from here:
Hi Teddy Tahoe readers!! You guys are going to love this recipe. These enchiladas actually rank up there with Gordon Ramsey level eating. The fillings are up to you (actually my husband hates onions but I recommend adding half an onion, caramelized). For this recipe I'm doing chicken and black beans, but you can do pork or beef if you prefer.
Start out by combining the seasonings and rub that into your chicken breasts. After warming the oil in the pan, you'll add the chicken, deeply browning on both sides for a few minutes each. Here's the fun part - add 8 ounces of your favorite beer to the pan. Being from Butte County, I usually use Sierra Nevada Pale Ale. If you like a lot of heat you may want to add a diced jalapeño too. Simmer for 20 minutes while you make the sauce.
For the sauce, add the oil and flour to the sauce pan to brown, stirring for 2 minutes. Then add all remaining ingredients and simmer for around 6 minutes to thicken. While this simmers, shred your chicken, incorporate it back into the beer pan, and mix in 1/3 cup sauce, black beans, and lime juice.
Assembly: Dip tortillas in sauce, add your cheese, chicken and black beans down the middle of each tortilla, and roll up carefully with two hands. After you roll them up, add any remaining sauce, and extra cheese on top. Bake uncovered for 30 minutes (adjust for desired brownness). Let rest for a bit, serve, and enjoy! I like to serve this with roasted asparagus since it's so easy to pop in the oven under the enchiladas. My husband always has seconds and that's enough of a pat on the back for me!
BEER & LIME RED ENCHILADAS
3 chicken breasts
1 can black beans
8-10 tortillas of your choice
Monterey jack cheese
2 teaspoons freshly grated lime zest
1 teaspoon brown sugar
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon chipotle chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
8 ounces of your favorite beer
1 jalapeño pepper, seeded and diced (optional)
1 lime, juiced (add after you shred the chicken)
2 tablespoons olive oil
2 tablespoons flour
1 1/2 cups your favorite beer
15 ounces tomato sauce
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper (adjust to your preference)
1/4 teaspoon salt
1/4 teaspoon pepper
